Cheesecake with Cherries
- For the base
- ½ cube fresh Yeast (approximately 21 grams or 3/4 ounce)
- 150 milliliters lukewarm milk
- 100 grams sugar
- 400 grams Pastry flour
- 1 pinch salt
- 1 egg
- 40 grams butter
- 1 packet Vanilla sugar
Dissolve yeast in lukewarm milk. Stir until smooth and add a little sugar. Mix in flour, remaining sugar, salt, egg, vanilla sugar and butter. Knead with dough hook of a hand mixer and let stand for about 45 minutes in a warm place.
Preheat oven to 180°C (approximately 350°F). Separate eggs and drain cherries. Mix yolks with 125 grams (approximately 4 1/2 ounces) of sugar and mascarpone. Add quark and pudding mix. Beat egg whites with remaining sugar until stiff and fold into yolk mixture. Set aside 1/3 of yolk mixture and stir in cocoa powder.
Fold cherries into light yolk mixture. Grease a baking dish, sprinkle with a little flour and roll out dough. Press edges up slightly and pour in cocoa yolk mixture. Top with light yolk mixture and marble slightly using a fork.
Bake in preheated oven for about 40 minutes. Remove, cool briefly, cut into pieces and sprinkle with powdered sugar to serve.
