Cheesecake with Berries
Do almonds contain much fat? Yes, more than 50 percent. But this fat is composed of valuable unsaturated fatty acids and is therefore good for the body. Several studies show that almonds can even lower an increased cholesterol level and thus reduce the risk of cardiovascular diseases.
For the cheesecake you can vary the topping according to your mood. For example, how about mango slices and grated coconut?
- For Dough
- 100 grams Pastry flour
- 70 grams ground almonds
- 30 grams chopped almonds
- ½ fresh lemon (zest and juice)
- 70 grams sugar
- 1 egg
- 140 grams butter
Prepare pastry. Combine flour with nuts, lemon zest, sugar and a pinch of salt. Place flour in a bowl and make a well in the center. Add beaten egg and butter cut into small pieces. Knead dough until smooth, make a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
Separate eggs. Beat egg yolks with quark, pudding, sugar and lemon juice. Beat egg whites with a pinch of salt until stiff and fold into quark mixture.
Roll out dough on a floured work surface and place into a buttered mold. Spread cream onto it, smooth and bake in preheated oven at 180°C (approximately 350°F) for about 50 minutes. If necessary, cover with buttered baking paper so that surface of the cake does not brown too much.
Rinse and dry strawberries, hull and halve lengthwise. Clean raspberries. Rinse and dry cherries.
Remove cake from oven, cool, remove from mold and cool completely. Set on a cake plate, top with all berries adn dust with powdered sugar. Serve.
