For the base: combine flour with almonds, sugar and 1 pinch of salt. Place on a work surface and make a well in the center. Beat an egg and add to the well. Cut butter into small pieces and arrange around the well. With your hands, quickly knead into a smooth dough. Shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
