Cheesecake total thanks to plenty of Schichtkäse. With its high-quality protein content, this cream cheese strengthens the muscles and is ideal for athletes who have an increased protein requirement. It is also rich in calcium, but also in vitamins A, B2 and B12.

To prevent the cheesecake from collapsing too much in the middle after baking, you can leave the cake to cool in the oven for about 30 minutes after the end of the baking time. The oven door should be left open a little bit - simply clamp a cooking spoon between the oven and the door.

For the dough
250 grams Pastry flour
125 grams cold butter
2 tablespoons sugar
1 pinch salt
1 generous pinch Lemon peel
1 egg
For the filling
700 grams Cottage cheese
175 grams sugar
100 grams melted butter
2 packets vanilla pudding mix (Or 50 g/ 5 tbsp of cornstarch)
6 eggs
1 teaspoon grated Lemon peel
½ small bottle Lemon extract
100 grams Whipped cream
also
250 grams Strawberries
200 grams Whipped cream

Preparation steps

Pour flour on the work surface, mix with salt, lemon zest and sugar and make a well in the center. Cut the cold butter into small pieces and distribute over the flour. Crack the egg in the center and add approximately 50 ml (approximately 1/4 cup) of lukewarm water. Mix all ingredients with a pastry knife, knead with hands quickly into a pliable dough. Form into a ball, wrap in plastic wrap and refrigerate 30 minutes.

Roll dough between 2 sheets of parchment paper and line the greased springform pan with the dough.

Separate the eggs for the filling. Mix cheese with sugar, custard powder, egg yolk, butter, lemon flavoring and lemon zest. Beat egg whites until stiff. Whip cream until stiff and fold in the egg whites, then fold all together. Spread the cheese mixture onto the dough, and bake in preheated oven (180°C) (approximately 350°F) 60-80 minutes. To test if cake is done cooking, insert a toothpick in the center of the cake. It is done when the toothpick is clean when removed. Let the finished cake stand for 10 minutes in the oven with the door ajar. Then remove and let cool completely.

Rinse the strawberries, remove stems and cut in half. Whip the cream. Cut the cake into pieces. Garnish slices of cake with cream and strawberries and serve on dessert plates.
