In this cheesecake the taste is enhanced by the juice and peel of an orange. The orange scent already has a stimulating, positive and generous effect. At the same time it makes us more relaxed and calm. This has been proven, among other things, by an experiment conducted by researchers at the Universities of St. Gallen and Washington.
Schichtkäse is a cream cheese product made from cow's milk - similar to the better known quark. However, Schichtkäse is not stirred or centrifuged smooth, but scooped by hand in layers directly into the packaging.
For the dough, form flour into a mound on a flat work surface. Mix with salt and sugar and create a well in the center. Cut cold butter into small pieces and distribute around well. Crack egg into well and add about 50 ml (approximately 3 tablespoons) lukewarm water. Chop all ingredients together with a knife and then knead together with hands until smooth. Shape into a ball, wrap in plastic wrap and chill for 30 minutes.
Roll dough out between 2 sheets of parchment paper and press into a greased springform pan.
For the filling, mix quark with sugar, cornstarch, eggs and lemon zest. Beat cream until stiff and fold into filling. Spread over dough, smooth and bake in a preheated oven at 180°C (approximately 350°F) for 1 hour. Cheesecake is done when a toothpick inserted in center comes out clean. Cool cake in pan for 10 minutes. Then remove and cool completely. Slice and serve.
