Cheese Puffs with Dried Cherries

- 4 ozs milk
- 3 ozs butter
- salt
- 6 ozs Pastry flour
- 3 eggs
- 3 ozs Stilton cheese (rind removed)
- 5 ozs cream cheese
- ½ bunch parsley
- 2 ozs soft dried Cherries
- peppers
Bring milk, 1/2 cup water, butter, and 1 pinch of salt to a boil.
Pour in flour all at once and stir over low heat with a wooden spoon until a dough forms a ball at the bottom of the pot. Transfer to a bowl and let it cool for 10 minutes.
Gradually add the eggs to the dough and mix.
Line a baking sheet with parchment paper. Pour the batter into a piping bag and pipe dots of batter onto the baking sheet. Bake on the 2nd shelf from the bottom in a preheated oven at 400°F/convection 350°F for 20 minutes (convection 15 minutes).
Mix together the stilton cheese with the cream cheese. Rinse the parsley, shake dry and pluck leaves. Set some aside and chop remaining leaves.
Take puffs out of the oven, cut horizontally and put them on an oven rack to cool.
Chop dried cherries. Mix with the chopped parsley and cheese and season with salt and pepper. Fill puffs with cheese and serve garnished with parsley.
