475 milliliters dry white wine
400 grams Emmentaler cheese
400 grams Gruyere
15 grams cornstarch
5 centiliters Cherry brandy
salt
freshly ground peppers
1 pinch freshly grated Nutmeg

Preparation steps

1.

Heat a fondue pot. Peel the garlic, cut in half and rub the pot with the cut surface of the garlic.

Heat the wine and pour into the fondue pot. Meanwhile, slice the cheese and add to the pot, then pour in the wine and stir over medium heat to form a smooth cream.

3.

Stir the cornstarch with a little kirsch until smooth, stir into the cheese and simmer. Season with salt, pepper and nutmeg.

4.

Place the pot on a fondue burner.

5.

Serve the cheese fondue with sliced mixed vegetables, figs and bread for dipping.
