300 grams Gruyere
150 grams Emmentaler cheese
175 grams Raclette Cheese
½ tablespoon cornstarch
½ liter white wine
1 garlic
3 tablespoons Cherry brandy
Nutmeg
salt

1 kilogram mixed Vegetables (such as Broccoli florets, cauliflower florets, small potatoes)
500 grams white bread (diced)

Preparation steps

Coarsely grate the cheeses, the mix in a bowl with the cornstarch. Add the wine to a fondue pot, mix in the garlic, and cook for 1-2 minutes over high heat. Remove the garlic, and reduce the heat until the wine is barely boiling. Add the cheese, in batches, stirring constantly until it has completely melted. Continue to add the cheese until it has all been incorporated. Add the cherry brandy, and season to taste with salt and nutmeg.

Blanch the vegetables in boiling salted water for 5-7 minutes. Remove from the water, shock in an ice water bath, and drain thoroughly.

Arrange the vegetables and the bread on plates with one or two fondue forks. Serve the plates with the fondue.
