Cheese and Salami Cakes
Divide the bread into small cubes. Rinse thyme, shake dry and pluck off the leaves. Boil thyme leaves in the milk. Remove from heat and gradually stir in the cheese until it is melted. Separate the eggs. Stir egg yolks into the cheese mixture, season with salt, pour the mixture over the bread cubes. Let absorb 10 min.
Preheat oven to 150°C. Cut salami into cubes and mix with the cheese-bread mixture. Beat egg whites with 1 pinch of salt until stiff and fold into the mixture.
Grease 6 tartlet tins, fill with the mixture, smooth. Bake in the oven on the middle rack at 150°C for 25-30 minutes until golden brown. Serve hot, warm or cold.
