- For the base
- 2 cups white Bread flour
- 1 tsp quick-rising active dry yeast
- 1 tsp salt
- ⅞ cup warm water
- 1 Tbsp olive oil
- For the topping
- 1 Tbsp olive oil (plus extra for brushing)
- 2 onions (sliced)
- water (if needed)
- salt
- peppers
- ½ cup Mozzarella (chopped)
- To garnish
- Basil
Preparation steps
1.
For the base: mix together the flour, yeast and salt in a mixing bowl. Make a well in the centre and pour in the water and oil. Mix to a soft, fairly wet dough.

Turn onto a lightly floured surface and knead for 5 minutes until smooth. Put into a lightly greased bowl, cover with oiled cling film and leave in a warm place to rise until doubled in size - about 1 hour.

Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.

Quickly knead the dough and roll out into a large round about 25cm|10" in diameter. Place on the baking tray. brush the dough with olive oil

For the topping: heat the oil in a frying pan and cook the onions over a low heat until soft, stirring frequently. Season with salt and pepper. Cover and cook gently until browned and caramelised. If they begin to look dry, add a little water.
6.
For the topping: brush the dough with olive oil and sprinkle with the cheese.
7.
Bake for 10-15 minutes until the cheese has melted and the topping is piping hot. Garnish with basil.
