2 ½ cups milk
4 tablespoons Corn starch
½ onion
1 bay leaf
6 black peppercorns
1 pinch grated Nutmeg

Preparation steps

1.
Stir a few tablespoons of the milk into the cornflour and set aside.
2.
Pour the remaining milk into a heavy-based pan and add the onion, bay leaf, peppercorns and nutmeg. Bring just to a boil over a medium heat, then remove from the heat, cover and set aside to infuse for 10 minutes.
3.
Strain the flavoured milk back into the pan.
4.
Whisk a few tablespoons of the warm infused milk into the cornflour mixture and add to the pan. Bring to a boil, whisking until the sauce thickens and simmer for 2 minutes.

Season to taste with salt and pepper
