Ingredients

superfine caster sugar

large egg yolks
2 teaspoons

gluten-free all purpose flour (plus extra for dusting)
2 teaspoons
xanthan gum (if not included in the flour)
To decorate
1 cup
white chocolate (chopped)
chopped Pistachio

Preparation steps

1.
Beat the butter in a mixing bowl until soft. Add the sugar and beat until smooth, then beat in the egg yolks and vanilla.

Gradually add the flour and xanthan gum and mix to a stiff dough. Flatten the dough into a disc, wrap in cling film and chill for 1 hour.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Roll out the dough on a lightly floured surface, about 5mm|1/4" thick.

Cut out rounds, then remove the centres with a smaller cutter or apple corer.
6.
Place on the baking trays and bake for 10-15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
To decorate: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and leave to cool slightly.
8.
Drizzle over the biscuits and sprinkle with dried cranberries and pistachios. Leave to set.
