Ingredients
Cauliflower Au Gratin
Rinse cauliflower and cut into florets. Boil in salted water for about 3 minutes, then rinse in cold water and pat dry.
Peel onions, chop and sauté in butter. Mix with cauliflower and parsley. Season with salt and nutmeg and in a large buttered baking dish (or 4 greased small dishes).
Whisk eggs, milk and cream. Season with salt, pepper and nutmeg.
Pour egg mixture over cauliflower and sprinkle with cheese.
Bake in a preheated oven at 180°C (approximately 350°F) for about 30 minutes. Serve immediately.

The cauliflower is easily digestible due to its fine cell structure, even babies tolerate it without any problems and it is also recommended for irritable bowel patients. However, the cabbage also scores points with its minerals, plenty of potassium keeps our heart in tact.
Even smarter
To the cauliflower casserole you can serve jacket potatoes or a colourful salad. It is also possible to bake raw, thinly sliced potatoes in the casserole. If you like it crunchy, you can sprinkle 3 tbsp. of pine nuts over the gratin. Another variation is to add garlic together with onions to the casserole. Not only low-carb fans will love this recipe.
