Yeast (approximately 42 grams)

250 milliliters
lukewarm Milk
1 tablespoon
Pastry flour (for the work surface)

Preparation steps

In a bowl, mix the two flours with the spices, make a well in the center, add the yeast and the sugar. Gradually pour in the lukewarm milk and up to 250 ml (approximately 1 cup) of lukewarm water, add the salt and knead into a smooth and pliable dough. Transfer to a bowl.

Preheat the oven to 50°C (approximately 125°F). Cover the dough and place in the oven with the door ajar and let rise 45 minutes. Transfer the dough to a floured surface and knead well, shape into a loaf and place on a greased baking sheet. Cover and let rise 30 minutes at room temperature.

Preheat the oven to 220°C (approximately 425°F) convection. Place a bowl of boiling hot water in the bottom of the oven. Brush the bread with water and make a crosswise cut. Bake 10 minutes, then reduce the temperature to 180°C (approximately 350°F) and bake for another 50 minutes. Cool on a wire rack.
