Caramelized Fruit Pastries
Rinse baking sheets with cold water. Place puff pastry on baking sheets and allow to thaw.
Preheat the oven to 200°C (approximately 400°F).
Cut out dough with a large, round cookie cutter or a small bowl into 10 cm (approximately 4 inch) discs. Bake dough for 15 minutes, until golden brown.
Peel mango, cut flesh from core and julienne. Peel banana and cut into thick slices. Heat butter in a pan, add banana and mango slices and sauté briefly. Sprinkle powdered sugar and vanilla sugar over fruit and caramelize over medium heat.
Slice pastries discs in half horizontally and fill with caramelized fruit. Dust with powdered sugar and serve at room temperature.
