For the base
2 ¼ cups all-purpose flour
½ cup butter
¼ cup sugar
For the filling
¾ cup sugar
1 cup cream (48% fat)
2 Banana
lemon juice
To decorate

Preparation steps

1.
For the base: heat the oven to 180°C (160° fan) 350°F gas 4. Grease 6 individual tart tins.

Mix the flour and sugar in a mixing bowl. Rub in the butter and quickly work to a dough. Divide into 6 pieces and use to line the base and sides of the tins. Chill the pastry in the tins for 30 minutes. Line with non-stick baking paper and baking beans. Bake for about 20 minutes until cooked through. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.

For the filling: heat the sugar in a pan over a low heat until melted and lightly caramelised. Gradually stir in the cream and cook until the mixture has thickened. Leave to cool slightly.

Peel and slice the bananas, sprinkle with lemon juice and carefully mix with the caramel mixture. Spread the mixture in the tart cases and chill until set. Decorate with pecans, whipped cream and grated chocolate.
