For the mousse
90 grams sugar
1 Vanilla bean
2 egg yolks
3 eggs
250 milliliters milk
250 milliliters Whipped cream
For the caramel
100 grams sugar
2 tablespoons water
vegetable oil (for the pan)

Preparation steps

For the mousse, beat the sugar, eggs and egg yolks until frothy. Bring the milk and cream to a boil. Slit the vanilla pod lengthwise and scrape out the seeds. Add the vanilla pod and seeds to the cream. Stir in the egg mixture.

For the caramel, simmer the sugar in a saucepan with water until golden brown. Immediately pour into a lightly oiled pudding pan and tip the pan back and forth until the caramel coats the bottom.

Pour the milk mixture through a sieve. Pour into the pan. Place the baking dish in a roasting pan filled with boiling water. Bake for 60-70 minutes at 180°C (approximately 350°F). Let cool, remove from the pan and serve.
