Preparation steps

For the caramel sauce, let the sugar caramelize until golden brown. Add butter and stir. Mix heavy cream with 50 ml (approximately 3 tablespoons) of water and pour into caramel sauce while stirring. Then refrigerate. For the ice cream, mix 150 g (approximately .5 cup) of heavy cream with coffee beans. Heat (do not boil) and allow to cool well. Strain through a sieve, mix with remaining heavy cream and beat until stiff.

Slit vanilla bean lengthwise and scrape out vanilla. Whip the egg yolks with the sugar and vanilla with an electric hand mixer until fluffy. Fold in coffee cream and stir in cold caramel sauce. Pour into a chilled metal bowl and chill at least 4 hours.

Stir ice cream within the first hour to prevent large ice crystals.  Meanwhile, melt the chocolate in a double boiler and dip tops of waffle cones in to coat. Remove and set aside to harden. Scoop ice cream into cones and serve immediately.
