Caramel Apricots with Pistachio Yogurt
Rinse the apricots, cut in half and remove pit. Mix the apricots, cardamom and sugar in a saucepan. Cook over low heat to melt the sugar.
When the sugar becomes golden, pour in the Marsala. Simmer until the mixture is reduced about 2/3. Mix the cold yogurt with the pistachios and serve with the warm apricots.
