Rinse the apples and pat dry. Remove the stem, and skewer the apples with a wooden stick.
Bring the sugar, honey, butter, and heavy cream to a boil. Reduce the heat to medium. Simmer for 12-15 minutes until a soft, creamy caramel has formed.
Coat the apples in the caramel, followed by the sprinkles. Place on a piece of parchment paper until the caramel has set.
