1 Vanilla bean
300 milliliters milk
3 eggs
120 grams sugar
80 milliliters fresh strong Espresso (chilled)
300 milliliters Whipped cream (at least 30% fat butterfat)
1 tablespoon powdered sugar
200 grams Amaretti cookies (crushed into crumbs)
4 tablespoons Chocolate sprinkles

Preparation steps


To make the cappuccino cream: Halve the vanilla pod lengthwise, scrape out the seeds and add the seeds and pod to the milk in a saucepan. Bring to a boil.

Separate the eggs. In a bowl set over a pot of simmering water, beat the yolks with the sugar until thick and light.

Remove vanilla pod from the milk mixture. stir in the espresso, and add the hot milk mixture to the beaten yolks in a thin stream, whipping constantly.


Continue whisking the mixture over the hot water bath until it thickens. Transfer the bowl to an ice bath to cool.

Whip 200 ml (7 ounces) heavy cream to stiff peaks. Fold the whipped cream into the espresso mixture to finish the cappuccino cream.


Whip the remaining cream with powdered sugar to stiff peaks. Transfer to a pastry bag with a star tip. 

Combine the amaretti cookies with half the chocolate sprinkles. Divide half of cookie-chocolate mixture amoung 4 parfait glasses. Divide half of the cappuccino cream over the cookies. Add another layer of the remaining cookie-chocolate mixture and then a layer of cappuccino cream.

To serve, pipe rosettes of whipped cream on top of the trifles and top with the remaining chocolate sprinkles.
