2 egg yolks
2 tablespoons sugar
2 tablespoons Coffee liqueur
9 ounces Whipped cream
2 Apple
2 ounces sugar
½ Vanilla bean
7 ounces Apple juice
1 Cinnamon stick
2 sheets gelatin
5 ounces Whipped cream
2 tablespoons powdered sugar
1 lemon (juice)
3 tablespoons Almond syrup
1 tablespoon Amaretto
Cocoa (for dusting)

Preparation steps

1.

Boil espresso beans with sugar and water. Boil down to half.

Mix yolks with sugar until fluffy. Strain espresso beans and stir hot liquid into the egg yolk mixture. Whisk over an ice-water bath until cold and season with Kahlua.

Beat heavy cream until stiff and fold into mixture. Pour into cups and freeze.

Soak gelatin in plenty of cold water. Peel, core and dice the apples. Boil apple juice with sugar, vanilla and cinnamon stick.

Top frozen ice cream with apple compote. Finish with a helping of almond cream and dust with cocoa to serve.
