Preparation steps

1.

Blanch peaches in boiling water, rinse in cold water and peel. Place peaches into prepared preserving jars. Rinse rosemary, shake dry and add to the peaches.

2.

Combine white wine with sugar and 300 ml (approximately 1 1/4 cup) of water in a pot. Bring to a boil and simmer for about 5 minutes or until sugar has dissolved. Pour syrup over peaches, wipe the edges and seal jars well. Place jars into a large roasting pan filled with approximately 3 cm of water (approximately 1 1/4 inch). Place in the oven and turn oven temperature to 180°C (approximately 350°F) and keep at this temperature until small bubbles start to come up in the jars. Lower oven temperature to 150°C (approximately 300°F) and let peaches cook for about 20 more minutes. Turn off oven and let peaches cool in the oven. Serve as needed.
