1 kilogram ripe Peaches
250 milliliters dry white wine
250 milliliters Apple juice
1 organic lemon (2 tablespoons of juice and zest)
2 tablespoons Rum (or orange liqueur)
100 grams sugar (or more, depending on the sweetness of fruit)
150 grams chopped, blanched almonds

Preparation steps

1.

Blanch peaches in boiling water, rinse in cold water and peel. Halve and pit, cut into wedges.  

2.

Combine wine with apple juice, lemon juice, rum, lemon zest and sugar and bring to a boil.  Add peaches and poach until al dente. Place peaches and almonds into preserving jars and seal well. Let rest for at least 6 hours. Serve as needed.
