Preparation steps

Pour the pastry flour into a bowl and make a well in the center. Crumble the yeast into the well and mix with sugar and 4 tablespoons of lukewarm water. Cover let rest for about 30 minutes. Add the remaining ingredients and about 220 ml (approximately 1 cup) of water then knead until the dough releases from the bowl edge. Cover and let rest again for about 30 minutes.

Cut the ham into strips, mix with the ricotta, parmesan, sour cream and egg. Chop the oregano finely and stir into the mixture (set aside a few sprigs for garnish). Season with salt and pepper.

Divide the dough into four parts and roll out on a floured surface into circles 20 cm (approximately 8 inches) in diameter. Spread the filling onto 2 of the dough circles, leaving a free border around the edge of about 1 cm (approximately 1/2 inch). Place the remaining 2 circles over the filling and press the edges firmly. Place on a baking sheet lined with parchment paper and bake in preheated oven at 200°C (approximately 375°F) for about 30-35 minutes until golden brown.

Serve garnished with remaining oregano.
