Ingredients

For the liver
600 grams Calf's liver
1 onion
2 tablespoons butter
1 tablespoon Pastry flour
300 milliliters Beef broth
2 tablespoons Red wine vinegar (or balsamic)
1 tablespoon paprika
salt
black peppers
sugar
3 tablespoons Whipped cream
For the potatoes
1 packet Mashed potatoes
¼ liter milk
1 teaspoon salt

Preparation steps

For the potatoes: Cook mashed potatoes according to package instructions.

For the liver: Cut liver into strips. Peel onion and cut into very thin rings. Melt butter in a pan and saute onion rings for a few minutes. Dust liver with flour and add to the pan. Saute briefly and add hot broth, stirring constantly. Add vinegar and season with pepper, salt and sugar. Simmer for about 5 minutes and season to taste. Add sour cream amd mix well. Place potatoes and liver with sauce on plates and serve.
