Cake with Fruits and Vanilla Cream
- For the cake
- 250 grams butter
- 100 grams sugar
- 1 pinch salt
- 6 eggs
- 350 grams Pastry flour
- 1 packet Baking powder
- butter (for the baking sheet)
Thinly grease baking sheet with butter or coat with baking paper. Preheat oven to 175°C (approximately 350°F.)
For the cake: Mix butter with sugar, salt and eggs until fluffy. Combine flour with baking powder, sift into fluffy egg mixture and stir. Spread batter onto greased baking sheet and bake in oven at 175°C (approximately 350°F) for about 30 minutes. Remove and allow to cool slightly.
For the topping: While cake is baking, prepare pudding according to package directions using milk and sugar. Spread hot pudding across prebaked crust. Rinse, quarter and core apples and cut into thin columns. Rinse, halve and pit plums and cut into wedges. Arrange fruit wedges diagonally on pudding (so wedges resemble roof tiles) and sprinkle almonds on top. Bake cake in oven for about 20 minutes, until toothpick inserted in center comes out clean.
