Cake Bars with Cream Topping
Ingredients
- For the dough
- 5 eggs
- 120 grams sugar
- 1 packet Vanilla sugar
- 50 grams Pastry flour
- 3 teaspoons Baking powder
- 200 grams ground almonds
- 4 tablespoons Oats
- For the topping
- 12 Chocolate covered marshmallow cookies
- 250 grams Quark
- 50 grams Chocolate
- 500 milliliters Whipped cream
- 2 packets whipped cream stabilizer
Preparation steps
For the dough, beat the eggs with 2 tablespoons hot water until frothy. Sprinkle in the sugar and vanilla sugar and mix until well combined. Mix the flour with baking powder, sift over the egg mixture and fold in, along with the almonds and oatmeal. Line a baking sheet with parchment paper, spread the dough evenly and bake for 15 minutes at 180°C (approximately 350°F), then remove from the oven and allow to cool.
Remove 1/4 of the cake around the edges and finely crumble. Cut a strip of aluminum foil and form a border around the remaining cake. Stir together the quark and chocolate shavings. Whip the cream with the stabilizer until stiff, then fold into the quark mixture.
Set aside a small amount of the cake crumbs for garnish and fold the rest into the mixture. Spread on the cake, smooth, then sprinkle with remaining crumbs. Decorate with the chocolate covered marshmallows and refrigerate for at least 2 hours. Cut into slices and serve.
