Preparation steps

Soak the gelatine sheets in a bowl of cold water until softened, about 10 minutes.

In another bowl, stir the quark with the buttermilk, sugar, vanilla sugar and lemon zest until smooth. Squeeze the excess moisture from the gelatine sheets and place in a pot. Heat the gelatine sheets over medium heat until dissolved. Stir into the quark mixture. Allow to sit until the mixture starts to thicken.

In a bowl, beat the cream until stiff. Gently fold into the quark mixture. Divide the mixture between ramekins and refrigerate until set, about 2-3 hours.

To serve, warm the ramekins briefly in hot water. Invert onto plates and top with cherries.
