- For the cupcake batter
- 5 eggs
- 120 grams sugar
- 2 tablespoons Vanilla sugar
- 1 pinch salt
- 150 grams Pastry flour
Preheat the oven to 180°C (approximately 350°F). Line a muffin pan with paper liners.
For the cupcake batter: Separate the eggs. Whisk the egg yolks with the sugar and vanilla sugar until fluffy. Whip the egg whites and salt until stiff then fold into the egg yolk mixture. Sift the flour over top and fold in. Divide between the muffin wells and bake for about 25 minutes. Let cool slightly, remove from the pan and let cool completely on a wire rack.
For the decorations: Beat the marzipan, applesauce and apple juice until creamy. Cut a small section from the top of the cupcakes and fill with marzipan filling. Cut the removed sections in half and use to garnish as “wings.” Serve dusted with powdered sugar.
