200 milliliters dry white wine
100 grams cold butter

Preparation steps

1.

Add the veal stock and the white wine to a pot. Bring to a boil, and reduce by one third. 

2.

Cut the butter into small pieces. Gradually incorporate the butter into the veal stock mixture, whisking constantly. Be careful not to allow the mixture to come to a boil. Season to taste with salt and pepper.
