Mix the sugar, vanilla sugar, almonds and flour on a work surface. Form a well in the center. Chop the butter and spread around the flour. Beat the egg and pour into the well. Chop the ingredients with a knife and quickly knead into a smooth dough. Form the dough into a ball, wrap in plastic and chill for about 30 minutes.
Preheat the oven to 180°C (approximately 350°F). Roll out the dough on a floured surface. Use a cookie cutter to cut out shapes. Place the cookies on a lined baking sheet. Whisk the egg yolk and cream. Brush over the cookies. Bake for about 8 minutes, until golden brown. Remove, let cool and serve.
