For the dough
500 grams Pastry flour
30 grams Yeast
80 grams sugar
0.13 liter milk
3 egg yolks
½ teaspoon salt
125 grams butter (lukewarm, melted)
For the topping
200 grams butter
150 grams sliced almonds
150 grams sugar
¼ teaspoon cinnamon

Preparation steps

Place flour in a mixing bowl and make a well in the center. Crumble in yeast with 1 tablespoon of sugar and a few tablespoons of warm milk and mix with a little of the flour from the sides of the well to make a soft dough. Sprinkle with flour, cover and place in a warm place for about 15 minutes. Add remaining ingredients and process everything into a smooth dough. Cover with a kitchen towel and let rise about 30 minutes.

Roll out dough on a floured surface evenly to fit a baking sheet. Press dough into sheet and make finger indentations over the dough. Add pats of butter to the indentations. Distribute almonds evenly over the cake surface. Mix sugar and cinnamon and sprinkle over the dough. Bake cake in a preheated oven at 200°C (approximately 400°F) about 40 minutes. Cool and serve.
