Toast buckwheat in a dry frying pan over low heat. Heat 1 tablespoon butter in a pan and fry onions until softened. Add ginger and buckwheat and cook briefly. Add 500 ml (approximately 2 cups) chicken stock. Cover and simmer over medium heat, about 60 minutes.

During cooking, frequently uncover pot and stir in small amounts of remaining chicken stock until completely absorbed. Add a little hot water to loosen. Season buckwheat with salt and pepper. Stir in 1-2 teaspoons butter. Fill teacups with buckwheat, press lightly, and invert into small bowls. Garnish to taste with fresh herbs.
