250 grams fresh Broad bean (shelled)
100 grams Bacon
2 onions
1 clove garlic cloves
salt
freshly ground black peppers
6 Tbsps olive oil
4 Tbsps White balsamic vinegar
8 slices Ciabatta

Preparation steps

1.

Blanch the beans for 5 minutes in boiling salted water. Remove from the water, rinse under cold water, and drain well. 

2.

Cut the bacon into strips. Fry in a dry pan until crispy. Peel the onions and garlic. Julienne the onions, and finely dice the garlic. Add the onions and garlic to the pan with the bacon, and sauté. Season to taste with salt and pepper. 

3.

Mix 4 tablespoons of the olive oil and the balsamic vinegar in a small bowl. Add the dressing and the beans to the bacon mixture. Toss until combined, set aside, and let marinate together. 

4.

Drizzle the ciabatta with the remaining 2 tablespoons of olive oil. Toast the ciabatta on both sides in a pan. Rub the ciabatta with the remaining clove of garlic. Top with the bean mixture, and serve immediately.
