For the batter
100 grams softened butter
100 grams sugar
1 packet Vanilla sugar
2 eggs
100 grams Pastry flour
50 grams cornstarch
½ teaspoon Baking powder
20 grams cocoa powder
Parchment paper (for the pan)
For the filling
150 grams Dark chocolate
150 grams softened butter
100 grams cane sugar
3 eggs
1 pinch salt
1 packet Vanilla sugar
150 grams coarsely chopped Walnut
For serving
cocoa powder (for dusting)

Preparation steps

1.

For the batter, beat the butter, sugar and vanilla sugar until fluffy. Gradually stir in the eggs. Mix the flour, cornstarch, cocoa powder and baking powder. Fold the flour mixture into the butter mixture.

For the filling, melt the chocolate and butter over a hot water bath, stirring constantly. Stir in 1 pinch of salt.

Separate the eggs. Beat the egg yolks with 2/3 of the sugar and vanilla sugar until fluffy. Beat the egg whites with the remaining sugar until stiff. Fold the chocolate mixture and egg whites to the egg yolk mixture. Carefully fold in the walnuts.

Line a baking pan with parchment paper. Spread 1/3 of the batter in the pan. Spread the filling on top and cover with the remaining batter.

5.

Bake for about 45 minutes at 150°C (approximately 300°F). Remove and let cool.

Cut into pieces and serve sprinkled with cocoa powder.

(The eggs promote rising during baking, but after the brownies are removed from the oven they will collapse for a delightfully dense, fudgelike texture.)
