Preparation steps

1.

For the orange sauce: Peel and thinly slice oranges. Boil wine and sugar, then poach oranges slices for a few minutes, then purée. Mix together cornstarch and water, then add to sauce to thicken. Bring to a boil once more and allow to cool.

For the brownies: Combine milk and oil over medium heat. In a separate bowl, combine eggs, sugar, vanilla and salt. Mix in flour, cocoa powder and milk-oil mixture. Pour batter into a baking sheet lined with parchment and bake in an oven preheated to 210°C (approximately 410°F) for about 8 minutes. Remove and cut into 12 equal rectangles.

For the cream: Cut vanilla bean lengthwise, scrape out seeds and add seeds and bean to milk. Bring mixture to a boil.

Beat egg yolks and sugar in a bowl, mix in flour.

Stir boiling milk into egg yolk mixture. Pour everything back into the pot, remove the vanilla bean and bring to a low boil, stirring constantly.

Put cream through a sieve, let cool and sprinkle with sugar.

Take a brownie, spread some cream, then top with another brownie Repeat to create 3 brownie layers and 2 cream layers. Top with a dollop of cream and garnish with apricot strips and chocolate shavings. 

8.

Spread orange sauce on a plate, add brownie, then dust with cocoa powder. Serve immediately.
