- 8 small Veal Medallions
- 3 Tbsps clarified butter
- 1 zucchini
- 2 tomatoes
- 250 grams Mozzarella
- 1 bunch Basil
- 150 grams Whipped cream
- 100 milliliters Cognac
- salt
- freshly ground peppers
Preparation steps

Rinse meat, pat dry and sprinkle with salt and pepper. Fry in butter on each side for 4 minutes, remove from pan and put in an oven-proof dish. Rinse tomatoes and zucchini, pat dry and cut into slices.

Drain cheese and cut into slices. Pluck basil leaves. Spread zucchini slices on the slices of meat and top with basil, cheese and tomato slices. Broil under oven broiler 8 minutes, watching carefully.

Combine the meat juices in the pan with cream and cognac, bring to a simmer and season with salt and pepper. Distribute veal medallions on plates, drizzle with sauce and serve with baguette slices, if desired.
