Preparation

Preheat the oven to 180 ° C convection.

Peel shallots and chop finely. Rinse and halve chile pepper, remove seeds and ribs and chop finely. Heat oil in a pan and saute shallots and chile pepper. Add tomatoes and simmer, stirring occasionally, for about 10 minutes on low heat. Season with salt and pepper and arrange in four ramekins. Gently add 2 eggs into each ramekin. Combine heavy cream with creme fraiche, pour over eggs. Lightly season with salt and pepper. Sprinkle with crumbled feta cheese and bake in preheated oven at 180°C (approximately 350°F) for 12-15 minutes. Garnish with cilantro and serve.
