white fish fillets (cod, haddock or pollack)
4 cups
4 tablespoons
plain flour (sifted)
2 teaspoons

eggs (beaten)
1 ½ cups

Preparation steps

1.
Cut the fish into strips about 2 cm/3/4 " wide.

Put the oil in a deep pan and heat until smoking.
3.
Mix the flour with the salt and pepper. Dredge the fish strips with the seasoned flour, shake off the excess flour then dip the fish strips into the beaten egg and coat with the bread crumbs.
4.
Fry the fish in batches in the hot oil for 3 - 4 minutes or until lightly browned.
5.
Drain on kitchen paper and serve with chips.
