For the cake
200 grams Whole wheat flour
80 grams Pastry flour
1 pinch salt
1 cube fresh Yeast
120 milliliters lukewarm milk
60 grams sugar
150 grams Marzipan
80 grams melted butter
100 grams ground almonds
50 grams chopped almonds
Rum extract
Almond extract
1 generous pinch Mace (ground)
1 generous pinch Cardamom
1 pinch ground cinnamon
1 egg
150 grams raisins
For cooking
butter (for the pan)
Pastry flour (for the pan)
100 grams melted butter
6 tablespoons sugar
powdered sugar (for dusting)

Preparation steps


For the cake: Mix both flours and salt in bowl, make a well in the middle, crumble in yeast and mix with 1 tablespoon sugar and 3 tablespoons lukewarm milk. Mix with flour from edge, cover dough and let rest for about 30 minutes in warm, draft-free place.


Dice marzipan.


Add butter, almonds, remaining sugar, milk, flavorings, spices and egg to dough and knead with hands or dough hook of electric hand mixer until smooth. If the dough is too moist, add flour. If the dough is too dry, add lukewarm milk. Dough should separate from edge of bowl. Cover dough and let rest for 45 minutes. Then add marzipan and raisins and form 2 loaves. Add loaves to buttered dishes, let rest for 15 minutes then bake in preheated oven for about 45 minutes.


Immediately overturn breads from dishes and coat repeatedly with melted butter. Sprinkle breads with sugar, let cool and sprinkle with powdered sugar. Slice breads and serve.
