4 ounces Chicken liver
4 tablespoons butter (about 60 grams)
1 sprig thyme

4 Walnut (about 16 grams)
1 large Cucumber (about 600 grams)
1 pound Pumpernickel round (about 25 pieces)
4 ounces Cream cheese (13% fat)

1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Non-stick pan, 1 Wooden spoon, 1 Large knife, 1 deep bowl (or bowl), 1 Immersion blender, 1 Butter knife, 1 Teaspoon, 1 Paper towel

Preparation steps

Peel the onion and chop finely. Remove the fat and skin from the liver, then rinse, pat dry and chop finely.

Rinse the thyme, shake dry and pluck leaves. In a non-stick pan, heat 1 tablespoon of butter and cook the onion until translucent.

Add the liver and thyme and cook until liver is cooked through,  about 5 minutes, adding 1 tablespoon of water halfway through. Season with salt and pepper and allow to cool slightly.

Finely chop the walnuts with a large knife and mix with the liver mixture. Place in a tall vessel, add the remaining butter and puree with an immersion blender.

Rinse the cucumber thoroughly, wipe dry and cut into 25 equal slices.

Spread the cream cheese over the pumpernickel bread and top each bread slice with a slice of cucumber.
