Preparation steps

For the bread pudding, coarsely chop hazelnuts. Lightly toast hazelnuts in a dry pan and remove from pan. Sprinkle 25 grams (approximately 2 tablespoons) sugar into hot pan and cook until slightly caramelized, then pour onto a plate. Add butter to pan, return  hazelnuts to pan and add an additional 25 g (approximately 2 tablespoons) sugar and cook until sugar is caramelized. Mix in raisins and stir well, then pour onto a piece of wax paper and let cool.

Peel apple, quarter and remove seeds, then cut into pieces. Mix eggs, milk, remaining sugar and vanilla. Cut bread into thin slices. Line a buttered casserole dish with sliced bread. Crumble hazelnut brittle and mix with apple pieces, then tuck mixture between slices of bread. Pour egg mixture over bread slices. Bake in preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F), 30-40 minutes.

For the vanilla sauce, pour milk into a pot. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife, then mix seeds with milk. Bring vanilla milk to a boil. Stir in sugar. Reduce heat. Whisk egg yolks and gradually beat into milk with a whisk. Continue to whisk until sauce is slightly thickened, but do not allow to boil.

To serve, cut bread pudding into serving pieces or use a pastry ring to cut out oval-shaped pieces. To serve, dust with powdered sugar and serve with vanilla sauce.
