Preheat oven to 175°C (approximately 350°F). Grease a baking dish with butter. Cut bread into 1 cm (approximately 1/2 inch) thick slices. Peel apples, quarter, core and thinly slice. Drizzle with lemon juice and 2 tablespoons of sugar. Toast almonds.
Working in layers, add bread, apples, almonds and honey to baking dish, ending with bread and almonds. Whisk milk, cinnamon and eggs and pour over entire dish. Let sit for 10 minutes and then bake for 50-60 minutes. Remove, slice and serve.
