5 ½ cups Berry (e. g. raspberries and blueberries)
½ cup Pectin (scant)
cup Red currant juice
1 lemon (juiced)
1 Tbsp Corn starch
12 ozs white Bread (crusts cut off)

Preparation steps

1.
Line the loaf tin with cling film.

Place 250 g berries in a pot and sprinkle with the jam sugar. Add the redcurrant juice and the lemon juice and bring to the boil. Simmer for a few minutes then purée. Return to the pot and bring back to the boil.

Mix the cornflour with a little cold water, add the fruit purée, bring to the boil and allow to bind. Stir in the remaining berries, remove from the heat and leave to cool.
4.
Cut the bread to fit the tin and place the pieces in it. Fill with the berry mixture and cover with the remaining bread so that the filling is fully enclosed. Cover with foil and chill in the fridge for at least 4 hours (better overnight).
5.
To serve, knock out of the tin and slice.
