Heat the milk, sugar and vanilla pod until the sugar has all dissolved. Remove from the heat and leave for 10 minutes to allow the vanilla flavour to infuse the milk.
Whisk the egg yolks and the eggs in a bowl. Strain the milk through a sieve and pour onto the egg mixture, a little at a time, whisking continuously. Whisk over a hot water bath until thick and creamy (perform a rose test to see if the custard base is ready). Remove from the heat.
Stir the chocolate into the custard until it has melted. Now stir the custard until cool, if necessary over a cold water bath.
Whisk the cream until stiff and fold under the ice-cream mixture. Pour into an ice-cream machine to finish. Or pour into a flat metal container and place in the freezer for at least 3 hours, stirring regularly.
Wash and clean the blackberries and dab dry. Cut into small pieces and mix into the frozen ice-cream. Now serve or freeze until required.
