1 ⅕ kilograms Veal (boiled)
2 onions
2 garlic cloves
2 carrots
150 grams Celery root
salt

2 Tbsps vegetable oil
1 Tbsp Tomato paste
250 milliliters dry white wine
75 milliliters Raspberry vinegar
600 milliliters Veal stock
2 bay leaves
1 tsp peppercorns
4 Juniper berries
1 tsp honey

Preparation steps

Preheat the oven to 100°C (approximately 210°F).

Rinse veal and pat dry. Peel onions, garlic, carrots and celery and coarsely chop. Season meat with salt and pepper. Heat oil in a pan and brown on all sides. Remove and fry vegetables. Add tomato paste and wine. Add some vinegar and pour in a little stock. Put meat back in the pan so that the bottom third is in the liquid. Simmer for about 3 hours in the oven. Baste, as needed, with broth. After about 2 hours of cooking time, add bay leaves, juniper berries and peppercorns.

Remove meat from sauce. Simmer remaining liquid and add remaining vinegar and honey. Season with salt and pepper. Slice meat and serve with sauce.
