1 Rabbit (ready to cook, about 1.5 kg)
6 tablespoons olive oil
4 garlic
4 sprigs Tarragon
12 Cherry tomatoes
1 onion
200 milliliters dry white wine
salt
freshly ground peppers
parsley (for garnishing)
Sage (for garnishing)

Preparation steps

Rinse rabbit, pat dry and cut into 10-12 pieces. Whisk 4 tablespoons of olive oil with pepper.  Peel garlic and squeeze through a garlic press, add to olive oil mixture. Chop tarragon finely and add to the mixture as well. Coat rabbit pieces with the mixture well and let rest briefly. Rinse and dry cherry tomatoes. Peel, halve and thinly slice onion. Heat remaining olive oil in a large roasting pan and brown rabbit pieces on all sides.

Add onion and saute briefly. Add wine and simmer, covered, for about 40 minutes on low heat. Add tomatoes and simmer for 10 more minutes. Season with salt and pepper and garnish with parsley and sage. Serve with fresh baguette, if desired.
