Rinse rabbit and cut into 8 pieces. Peel onion and garlic and chop finely. Chop soup vegetables.
Cut bacon into cubes. Heat butter in a roasting pan and sauté the vegetables. Add the bacon cubes and fry the rabbit pieces in portions. Deglaze the pan with wine.
Chop anchovies finely, add rosemary, season with salt and pepper and simmer for 1 1/2 hours in a 180°C (approximately 350°F) oven. May add additional wine if desired.
