Peel onions and chop finely. Season meat with salt and pepper. Heat oil in a roasting pan and saute onions, rabbit and bacon for a few minutes. Add cider and apple juice. Braise, covered, in preheated oven at 200°C (approximately 400°F) for about 25 minutes.
Peel and core apples, cut into thin slices. Add apples and 2 tablespoons of chives to the pan 10 minutes before the end of braising. Uncover and braise for another 10 minutes. Sprinkle with remaining chives and season with salt and pepper. Serve hot.
